Theo is my husband’s grand father. Theo used to grow vegetables for a hobby and this is his recipe that was originally called ‘Green Tomato Pickles.’ However, it is not pickled Green Tomatoes. The recipe says the ingredients need to be boiled for 20 minutes. It is a kind of relish. You may wish to add other Spices, but Theo added only Curry Powder. I used KEEN’S Traditional Curry Powder, which is popular in Australia and I believe Theo used it.


Ingredients

2 pounds (900g) Onions *sliced 5-6mm thick
2 pounds (900g) Green Tomatoes *sliced 10mm thick
*Note: You can use less Onions and more Green Tomatoes
1 & 1/2 cups Sugar
1 tablespoon (20ml) Salt *Australian Tablespoon is 20ml
1 tablespoon (20ml) Curry Powder
1 cup Vinegar

Method
  1. Peel and slice Onions 5-6mm thick. Slice Tomatoes 10mm thick.
  2. Place Sugar, Salt, Curry Powder and Vinegar in a large pot OR deep frying pan, and stir to blend. Arrange Onions evenly, then arrange Tomatoes evenly on top.
  3. Bring to the boil and cook 10 to 20 minutes OR until Tomatoes are soft.
  4. Allow it to cool slightly, then carefully spoon into sterilised jars and seal.
