My ‘Creamy Sesame Dressing’ goes well with many Vegetables, but particularly good with Spinach. The other day I made this salad using leftover Boiled Eggs, and it was so good. I made it again to take this photo. This is how I made it.

Ingredients

60g Baby Spinach
2 Boiled Eggs *cut into quarters
A few thin slices Onion
Fried Shallot *optional, but recommended

Creamy Sesame Dressing
1 tablespoon Toasted Sesame Seeds *ground
2 tablespoons Japanese Mayonnaise
1/2 teaspoon Sugar
1 teaspoon Rice Vinegar
1 teaspoon Soy Sauce

Method
  1. Combine all the Creamy Sesame Dressing ingredients in a small bowl. *Note: If you don’t have a grinder, wrap Toasted Sesame Seeds with food wrap or paper, and use a rolling pin (OR a spoon) to press down the seeds.
  2. Place Baby Spinach and Onion in a mixing bowl (OR serving bowl), add the Dressing, mix to combine, then add Boiled Eggs and roughly mix.
  3. Add some Fried Shallot on top and enjoy.
